Hi Peter!
The "am/pm" setting doesn't seem to affect the date format - even if it set to "false", the date snapshot in a note has the "am/pm" suffix.
Could you be so kind to review your plugin code?
Let me add some details about this plugin. I just figured it out and it needs more instructions. It is very useful now for me.
1. Install the plugin.
2. Go into your Amplenote Account Settings > Plugins > Installed Plugins > Date
3. Enable the plugin with the slider toggle
4. Click the Gear icon for Date plugin settings.
5. As shown above by the developer, enter how you want to the date and time to look. This is important, without this your "date" will be an alphanumeric jibberish string, you must define it.
6. Enter "True" or "False" on the second line for AM/PM for 12 hour or 24 hour time
7. Save Changes
8. In your note enter {date} and the date and timestamp will be there. Create a macro on a keyboard to make this easy.

When I put in {date} I get back a alphanumeric jibberish string. I'm not sure how to access the options for this.
